How do you convert vinal or cassette to MP3?

Whats a guy gotta do to convert vinal to MP3? Can anyone shed some light?

No real magic. I have a turntable, a mixer, and feed it into a sound card.

Actually, to tell the truth I feed the mixer into an outboard A/D converter which feeds digital audio (via optical fiber, to avoid noise) into a sound card, but you don't need to go that crazy if you don't want.
